- 1 lb. medium shrimp, cleaned
- 4 garlic cloves, pressed
- 1 medium onion, chopped
- 2 Tbsp. butter or margarine
- 1 Tbsp. oil
- 1 (13 3/4 oz.) can chicken broth
- 1 small zucchini, sliced
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1 1/2 c. dry Minute rice
- 1/4 c. chopped fresh parsley
Directions

1Saute shrimp, garlic and onion in butter and oil over medium heat until shrimp are pink (3 to 4 minutes).

2Add broth, zucchini, lemon juice and salt.

3Bring to a full boil.

4Stir in rice and parsley.

5Cover, remove from heat and let stand 5 minutes.

6Fluff with a fork.
