Ingredients
- 1 lb. medium shrimp, peeled and deveined
- 1 Tbsp. plus 1 tsp. cornstarch
- 1/4 tsp. sugar
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. vegetable oil
- 1/2 c. chopped onion
- 1/4 c. chopped sweet red pepper or banana pepper
- 1 small clove garlic, minced
- 1 c. chopped, unpeeled zucchini
- 3 1/2 c. cooked Uncle Ben's rice
- 3/4 c. cashews (optional)
Directions

1Cut shrimp in half lengthwise.

2Combine next 5 ingredients; mix well.

3Add shrimp and toss gently to coat.

4Let stand 15 minutes.

5Heat oil in a large skillet; add shrimp.

6Cook, stirring constantly, for 3 to 5 minutes (until shrimp turn pink).

7Remove shrimp and set aside.

8Drain drippings, reserving 2 tablespoons in skillet.

9Add onion, chopped red pepper and garlic to skillet. Saute until tender.

10Add zucchini and saute 2 minutes.

11Stir in shrimp, cooked rice and cashews (optional); cook over low heat, stirring constantly, until thoroughly heated.

12Yields 4 servings.
