Sicilian Meat Roll

Ingredients
- 2 beaten eggs
- 3/4 c. bread crumbs
- 1/2 c. tomato juice
- 2 Tbsp. parsley
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic, minced
- 1 lb. ground beef
- 8 thin slices ham
- 6 oz. shredded Mozzarella cheese
- 3 slices Mozzarella, cut into triangles
Directions

1Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic.

2Stir in ground beef.

3On waxed paper or foil, pat meat into shape of a 12 x 10-inch rectangle.

4Arrange ham slices on top of meat, leaving a small margin around edges. Sprinkle shredded Mozzarella cheese over ham.

5Starting from short end, carefully roll up meat, using foil lift and seal edges and ends.

6Place roll, seam side down, in baking pan.

7Bake in 350° oven for 1 hour and 15 minutes; or until done.

8Place Mozzarella triangles over top of roll; return to oven for 5 minutes or until cheese melts.

9Makes 4 to 5 servings.
