Ingredients

  • 2 can fire-roasted diced tomatoes
  • 1 can diced tomatoes with peppers
  • 1 can cannolinni beans
  • 1/2 cup cooked rotisserie chicken or turkey
  • 1 hot Italian sausage, cooked and sliced
  • 1 tsp pesto
  • 1/2 cup kale
  • 1/2 tsp Red pepper flakes
  • 1 1/2 cup chicken stock
  • 1 tsp tomato paste
  • 1 parmesan cheese
  • 1 lemon zest
  • 2 Marinated fire-roasted peppers and juice
  • 6 clove garlic
  • 1/2 cup chopped celery
  • 1 basil leaves
  • 1/2 cup pipe rigate pasta

Directions

    Saute celery and chopped garlic in oil.

    Add tomatoes, stock, red pepper flakes, marinated peppers with 1 TBL of juice, chicken, sausage and tomato paste.

    Bring to simmer and simmer for 20 minutes on low.

    Add beans and pasta.

    Simmer for 9 minutes.

    Add pesto and kale.

    Turn off heat and allow to sit 5 minutes.

    Serve in a bowl.

    Top with zest, torn basil and parm.
