Sicilian Stir-Fry

Ingredients
- 1 1/2 to 2 lb. collard greens (use mustard greens, collard greens, kale, Swiss chard or a combination of all), wash and rinse well, pat dry, cut out stems and cut into small pieces
- 1/4 c. pine nuts
- 1/4 c. Sonoma sun dried tomatoes, cut into small pieces after soaking
- 1/4 c. olive oil or Pam spray, if you prefer
Directions

1Heat olive oil in large skillet or electric frypan over medium heat.

2Soak dried tomatoes in hot water (save liquid).

3Add nuts to oil in pan and stir-fry until lightly browned.

4Add tomatoes and stir-fry.

5Add prepared greens and stir-fry.

6You can add liquid from tomatoes, if needed.

7Prepare 20 minutes before serving.

8Good with beef, fish or poultry.

9Serves 4 to 6.
