  • 1 lb swiss chard
  • 4 quarts boiling water
  • 14 lb bacon, cooked and crumbled and bacon grease (optional)
  • butter (optional)
  • salt and pepper

    clean chard by rinsing under cold water and shaking off liquid.

    trim off ends and place in large pot of boiing water.

    blanch about 2 min, remove and strain over collander.

    add crumbled bacon pieces and a bit of the bacon fat for taste

    add butter to taste.

    ****replace swiss chard with endive or do a combination of the 2.

    This make a nice alternative to salad.

    times are approximate as I usually do enough for 8 people and in a large vat as our main meal portion.
