- 1 whole Small Yellow Onion
- 3 cloves Garlic
- 3 Medium Carrots
- 1 cup Red Bell Pepper
- 1 cup Yellow Bell Pepper
- 1- 1/2 cup Zucchini
- 1 cup Yellow Squash
- 1 head Broccoli
- 1 Tablespoon Olive Oil
- 5 whole Cooked Chicken Tenderloins (grilled, Poached, Sauteed, Whatever!)
- 1 can (13.5 Oz. Can) Coconut Milk
- 1 Tablespoon Curry Powder
- 1 teaspoon Salt
Directions

1Chop/slice/dice all veggies to desired size.

2Saute onion and garlic in olive oil until softened.

3Add carrots and bell pepper and saute for two minutes.

4Add zucchini, squash and broccoli and saute for 3-5 minutes, until tender.

5Add diced, cooked chicken and allow to warm.

6Stir in coconut milk, curry powder, and salt, and allow to simmer for 5 minutes.

7Serve over rice or a piece of toasted naan.
