Simple Chicken Curry

Ingredients

  • 1 whole Small Yellow Onion
  • 3 cloves Garlic
  • 3 Medium Carrots
  • 1 cup Red Bell Pepper
  • 1 cup Yellow Bell Pepper
  • 1- 1/2 cup Zucchini
  • 1 cup Yellow Squash
  • 1 head Broccoli
  • 1 Tablespoon Olive Oil
  • 5 whole Cooked Chicken Tenderloins (grilled, Poached, Sauteed, Whatever!)
  • 1 can (13.5 Oz. Can) Coconut Milk
  • 1 Tablespoon Curry Powder
  • 1 teaspoon Salt

Directions

    Chop/slice/dice all veggies to desired size.

    Saute onion and garlic in olive oil until softened.

    Add carrots and bell pepper and saute for two minutes.

    Add zucchini, squash and broccoli and saute for 3-5 minutes, until tender.

    Add diced, cooked chicken and allow to warm.

    Stir in coconut milk, curry powder, and salt, and allow to simmer for 5 minutes.

    Serve over rice or a piece of toasted naan.
