Simple Chicken Curry

- 1 tablespoon butter
- 2 tablespoons peanut oil
- 4 boneless chicken breast halves, skinned
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 tablespoons curry powder
- 1/2 cup diced apple
- 1/2 cup chopped dried apricots
- 1/2 cup golden raisins
- 1 14 1/2-ounce can chicken broth
- Salt
- Freshly cooked rice
Directions

1Melt butter with oil in heavy large skillet over medium heat.

2Add chicken and brown on both sides, about 5 minutes.

3Transfer to plate.

4Add onion and garlic to skillet and saute until translucent, about 6 minutes.

5Stir in curry powder.

6Return chicken to skillet.

7Add apple, apricots and raisins.

8Add enough broth to just cover mixture.

9Season with salt.

10Cover and simmer until chicken is just cooked through, about 10 minutes.

11Transfer chicken to platter.

12Keep warm.

13Continue simmering fruit mixture until fruit is tender and sauce thickens, about 5 minutes.

14Spoon over chicken and serve with rice.
