  • 3 lb. chicken wings, necks and backs
  • 2 small carrots, peeled
  • 3 celery stalks, cut into large pieces
  • 1/3 c. onions, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 Tbsp. parsley, chopped
  • water

Directions

    Place all of the ingredients into a large soup pot with enough water to cover.

    Cover and bring to a boil.

    Skim off the scum, re-cover, lower heat and simmer for 1 3/4 hours.
