- 3 lb. chicken wings, necks and backs
- 2 small carrots, peeled
- 3 celery stalks, cut into large pieces
- 1/3 c. onions, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3/4 Tbsp. parsley, chopped
- water
Directions

1Place all of the ingredients into a large soup pot with enough water to cover.

2Cover and bring to a boil.

3Skim off the scum, re-cover, lower heat and simmer for 1 3/4 hours.
