  • 1 15/16 cups pastry flour
  • 4 tablespoons cocoa powder
  • salt
  • 3/4 cup butter at room temperature
  • 1 3/4 cups vanilla sugar made by storing vanilla bean husks in a container of sugar
  • 2 egg yolks
  • 4 3/4 tablespoons dark chocolate melted and cooled

    Preheat the oven to 175 degrees Celsius.

    Sift together the flour, cocoa, and a pinch of salt. Set aside.

    Cream the butter and sugar together until white and fluffy. Add the egg yolks and chocolate, stirring constantly.

    Divide the dough into three parts. Roll each into a cylinder, cover with plastic wrap, and refrigerate for at least 2 hours.

    Remove the rolls from the refrigerator and cut into slices approximately 7 millimeters thick.
