  • 1/2 cups Brown Sugar, Packed, Organic Is Best
  • 1/2 cups Butter, Softened
  • 2 Eggs
  • 1-1/2 cup Whole Wheat Flour
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoons Baking Powder
  • 1/3 cups Almond Milk (plain Or Vanilla)
  • 2 Apples, Peeled And Shredded
  • FOR THE TOPPING:
  • 2 teaspoons White Sugar
  • 1/2 Tablespoons Ground Cinnamon

    1. Preheat oven to 350°F.

    2. Grease a 9x5 loaf pan with butter.

    3. Beat the brown sugar and butter together with an electric mixer or a fork and a strong arm. Add eggs and beat until combined.

    4. Mix in the flour, cinnamon and baking powder, then the almond milk. Stir. Fold in the shredded apples.

    5. Pour the batter into the loaf pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. With 2 minutes remaining, mix the sugar and cinnamon together for the topping. Sprinkle over the top. Bake for the remaining 2 minutes.

    6. Remove from oven and let cool on a rack about 10 minutes before removing from pan and slicing.
