6 ingredients
11 steps

Ingredients

  • 1 chicken (barbequed from the supermarket)
  • 2 -4 teaspoons curry powder
  • 400 ml coconut milk
  • 1 cup frozen peas and corn
  • 1 pinch salt, to taste
  • 1 tablespoon olive oil

Directions

  1. 1
Take cooked barbeque chicken (from the supermarket is fine), remove skin and remove flesh from the bones.
  2. 2
Cut the meat into bite size pieces.
  3. 3
Heat oil in frying pan and once hot add the curry powder.
  4. 4
Allow the heat to flavour up the curry powder before adding the chicken.
  5. 5
Stir chicken around pan ensuring it is coated with the curry powder.
  6. 6
Remove pan from the heat and add in coconut milk.
  7. 7
Reduce heat so that the coconut milk doesn't separate (it shouldn't if you use a good quality milk and do not use coconut cream).
  8. 8
Add frozen peas and corn and simmer for 10-15 minutes.
  9. 9
Season with salt and more curry powder to taste and to get a nice yellow looking curry sauce.
  10. 10
Serve on a bed of rice.
  11. 11
Delicious and even better the next day for lunch.
