Simple Lotus Root Salad

Ingredients
- 5 cm Lotus root (thinly sliced)
- 1 Salt and pepper
- 1 Cake flour
- 2 tbsp Garlic oil
- 1 bag Mixed leaves
- 1 slice Bacon
- 2 tbsp Olive oil
- 1 tbsp Sushi vinegar
- 1 tsp Whole-grain mustard
- 1 dash Salt & black pepper
Directions

1Slice the lotus root into 3 mm wide pieces, sprinkle on some salt and pepper, and thinly coat in flour.

2Wash and drain the vegetables.

3Combine the ingredients marked to make the dressing.

4Slice the bacon into 5mm widths.

5Thinly coat a frying pan with oil, and fry the bacon until browned.

6Remove the excess oil with a paper towel.

7Pour the garlic oil into the frying pan.

8Fry the lotus root slices and then drain.

9Put the mixed leaves in a serving bowl, add the bacon and lotus root, and pour on the dressing to finish.
