Simple Low-Fat Crepes

  • 1 cup flour
  • 14 cup sugar (can also use brown sugar or artificial sweetener)
  • 3 eggs
  • 1 12 cups skim milk
  • 1 pinch salt
  • 1 tablespoon butter

Directions

    Mix all ingredients together into batter.

    Use a blender if you wish.

    Spray crepe pan or any flat-bottom pan with cooking spray.

    Add batter to pan and swirl to coat (use just enough to coat entire pan).

    Cook until bubbles are visible, then flip.

    Cook until crepe slides easily off the pan, then remove from heat.

    Repeat until all batter is used up (no need to spray pan again).

    Makes roughly 10 crepes.

    Freeze well, can be reheated in microwave on high for 1 minute.
