Simple Mapo Tofu

  • 1 block Firm tofu
  • 120 grams Minced pork
  • 1 half White part of Japanese leek
  • 1 half Carrot (optional)
  • 1 clove Garlic
  • 1 Katakuriko slurry
  • 1 1/2 tbsp Tianmianjiang
  • 1 tsp Chinese chicken soup stock (powder)
  • 1 tsp Soy sauce
  • 1 tsp Sake
  • 100 ml Water
  • 1 tsp Doubanjiang (optional)

Directions

    Drain excess water from the tofu for half a day.

    Combine the seasonings.

    Heat vegetable oil and fry the garlic gently to bring out the flavor.

    Add the pork and carrot and stir fry.

    After the meat is cooked through, pour in the mixed seasonings.

    Simmer to let the meat absorb the flavor.

    Add the tofu and leek to simmer.

    My kids (3 year-old and 1 year-old) who love dishes seasoned with tianmianjiang, finished off the plate when I added blanched komatsuna to the dish!
