- 1 egg
- 2 tablespoons sugar (rounded or level, your choice)
- 1/4 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup flour
- 1 1/2 teaspoons baking powder
Directions

1Mix together the egg and sugar.

2Whisk in vanilla and milk.

3In a separate bowl, sift together the flour and baking powder.

4Whisk dry ingredients into wet, leaving a few lumps.

5Do not overbeat.

6Preheat a skillet on med-low to medium.

7Butter the skillet and drop by large spoonfuls, spreading the batter out.

8When many bubbles appear (a minute or two), flip pancakes over.

9Cook for another minute or two.
-
10Lightly press in the center of a pancake; if it springs back, they are done.
-
11Between skillets of pancakes, wipe out the brown butter with a paper towel and re-butter, as this will help give you light pancakes.
