Simple Red Beans Curry

- 1 can red beans drained and cleaned
- 1 onion
- 1 cup diced tomatoes
- 1 tablespoon mustard
- 1 pinch asafoetida optional
- salt as needed
- 2 tablespoons chilli powder or Substitute 3 Green Chillies
- 1 tablespoon spice mix Garam Masala, Indian
- 2 tablespoons oil
Directions

1First chop the Onions to small pieces.

2Heat the Oil in a pan till it just starts to smoke. Then add the Onions and saute for 3 minutes. Then add the tomatoes and continue to Saute for another 3-4 minutes.

3Now add the salt, Spice mix, Asafoetida to the pan and continue to saute for another 3-4 minute. Note that if you are using green peppers now is the time to add them.

4Now add the chilli powder to the pan and mix in the pan. Then add 2 cups of water and let boil.

5Now add the cleaned beans and continue to fry for another 5 minutes. As soon as the consitenct thickens remove from the stove.

6A simple Beans Curry is good to eat. Adjust the chilli according to your preference. Serve hot with Rice or with Indian Bread.
