- 1 (6 to 8 lb.) goose
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 apple, sliced
- 4 to 6 bacon slices
- bacon drippings
Directions

1Rub goose inside and out with salt and pepper.

2Fill goose with sliced apple.

3Truss bird.

4Cover breast with bacon slices and cheesecloth soaked in drippings.

5Place goose, breast side up, on rack in roasting pan.

6Roast at 325° until tender, about 20 to 25 minutes per pound, basting frequently with pan drippings. Serves 6 to 8.
