Ingredients

  • 1/4 cup salt
  • 1/4 cup olive oil, extra virgin
  • 2 tsp ground black pepper
  • 2 3/4 lb whole chicken, young and tender
  • 4 lb whole chicken, whole fryer
  • 1 lb carrots whole peeled
  • 2 large onions quartered
  • 1/2 stick salted butter
  • 1 pints water

    Wash chickens add to roaster

    Preheat oven 400 Fahrenheit

    Place chicken side by side lay whole carrots all around the chicken place quarters of onion in corners and in middle on sidesfor a total of 6 quarters the remaining 2 slip inside cavity of chicken

    Add salt over top of chickens, carrots, and onions.

    Add pepper same way.

    Drizzle butter over top of chickens add water to the side so as not to wash away salt and pepper.

    Drizzle oil over carrots and onions.

    Roast 400Fahrenheit for 45 minutes raise temp to 450 Fahrenheit for 30 minutes let sit 10 minutes serve hope you enjoy

    Make sure yo check for bags or giblets inside cavity
