Simple Seafood Caesar

  • 4 slices dark rye bread, crusts removed
  • 200g baby cos lettuce leaves
  • 1 radicchio lettuce, broken in bite size pieces
  • 4 spring onions, diagonally sliced
  • 250g seafood extender, or cooked prawns, or cooked white fish
  • coarsely grated zest of one lemon
  • black pepper
  • 1/3 cup KRAFT FREE* Coleslaw Dressing
  • 1 tablespoon KRAFT* Grated Parmesan Cheese, for sprinkling

Directions

    Cut rye bread into small cubes or triangular shapes.

    Bake in a moderate oven 180 degrees C for 15 - 20 minutes or until well dried and crisp.

    Arrange cos, radicchio, spring onions and seafood onto a large serving platter.

    Scatter over lemon zest, croutons and black pepper.

    Chill.

    Drizzle salad with dressing, sprinkle with parmesan cheese.

    Serve immediately.
