- 8 ounces Reggano Spaghetti
- 1 cup Season's Choice Sweet Peas, divided
- 1 cup Fit & Active Fat Free Chicken Broth
- 4 tablespoons Carlini Extra Virgin Olive Oil
- 8 ounces edenVale Fresh Mozzarella, small diced
- Salt and pepper to taste
Directions

1Cook the spaghetti in boiling water until just tender, drain and keep hot.

2In a small saucepan, bring 2 cups of water to a boil. Add a pinch of salt and frozen peas. Boil for 2-3 minutes. Drain and set aside.

3Heat broth in a small saucepan.

4Put half of the peas into a blender and mix at low speed. Gradually add the chicken broth and olive oil. Process until smooth.

5Add the mint, remaining whole peas, mozzarella and sauce to the pasta. Toss well.

6Season to taste with salt and pepper.

7Serve with a simple tomato salad and garlic bread.
