  • 300 milliliters milk warm
  • 2 tablespoons lemon juice
  • 2 eggs
  • 1/2 cup oil
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 500 grams buckwheat flour
  • 2 teaspoons instant dry yeast

    Make the buttermilk by mixing warm milk and lemon juice. Let stand for 10 minutes,

    Using an electric mixer, or bread making machine, add the ingredients in this order: eggs, warm buttermilk, oil, sugar, salt, flour, and yeast. Mix for 10 minutes to get a smooth but sticky dough. If necessary, add a little more flour or warm buttermilk. Place the dough in a plastic bag, close tightly, and let rise for 2 hours.

    Place the dough on a floured surface, and knead lightly to expel air. If the dough is too soft and sticks to your hands, add a little more flour, but not too much otherwise the bread will be tough. Shape the bread loaf or loaves, and place on a large, greased baking tray. Use a sharp knife to make a few diagonal cuts on the top of the dough. Let dough rise for 40 minutes more.

    Preheat oven to 180 degrees Celsius.

    Bake the bread for about 1 hour, or until golden.

    Cool on a wire rack, and store in an airtight container.
