  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons extra virgin olive oil
  • 1 (8 ounce) bagpre-washed spinach
  • 2 eggs
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 small carrot, grated
  • 12 cup wheat bran
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley flakes
  • 12 teaspoon paprika

Directions

    Heat 2 tbsp oil in a nonstick skillet on medium-low.

    Add spinach and saute, turning frequently, until wilted.

    Put spinach onto a plate to cool.

    Add chick peas, eggs, and seasonings to a food processor and pulse until combined.

    Add cooled spinach and process until spinach is incorporated.

    Pour mixture into a mixing bowl, then add carrot and wheat bran and stir to combine.

    Shape mixture into 4 patties - they will be very mushy, but they will crisp up when cooking.

    Heat 2 tbsp oil (or canola spray) on medium-high in a nonstick skillet.

    Add patties and cook about 5 minutes per side.

    Serve on a bun with a little ranch dressing, or however you like!
