  • 1 lb. lean ground chuck
  • 4 medium potatoes, peeled and diced
  • 2 large carrots, diced
  • 1 large onion, diced
  • 1 green pepper, diced
  • 1 (16 oz.) can whole tomatoes (undrained)
  • 1/4 tsp. pepper
  • 1/8 tsp. salt
  • Parmesan cheese (optional)

Directions

    Brown ground chuck, stirring to a crumble; drain well.

    Wipe skillet out with paper towel.

    Return meat to skillet.

    Layer potatoes, carrots, onion, green pepper and tomatoes over top. Sprinkle with pepper and salt.

    Cover and cook in oven at 350° for 45 minutes.

    When done, sprinkle Parmesan cheese over top if desired.
