- 4 medium potatoes, peeled and diced
- 2 large carrots, diced
- 1 large onion, diced
- 1 green pepper, diced
- 1 (16 oz.) can whole tomatoes (undrained)
- 1/4 tsp. pepper
- 1/8 tsp. salt
- Parmesan cheese (optional)
Directions

1Brown ground chuck, stirring to a crumble; drain well.

2Wipe skillet out with paper towel.

3Return meat to skillet.

4Layer potatoes, carrots, onion, green pepper and tomatoes over top. Sprinkle with pepper and salt.

5Cover and cook in oven at 350° for 45 minutes.

6When done, sprinkle Parmesan cheese over top if desired.
