  • 1 medium onion, diced
  • 1/2 c. rice
  • 4 carrots, sliced thin
  • 1 lb. ground beef
  • salt and pepper
  • 1 (No. 2) can tomatoes

    Put shortening in bottom of large casserole; arrange meat and vegetables in layers listed.
