  • 4 Tablespoons Unsalted Butter
  • 1/4 cups Light Brown Sugar, Divided Use
  • 2 whole Medium Apples, Peeled, Cored And Cut 1/8 Inch Thick
  • 1/2 teaspoons Cinnamon Plus A Pinch, Divided Use
  • 5 whole Large Eggs
  • 1/2 cups All-purpose Flour
  • 1/2 cups Whole Wheat Flour
  • 1 cup Milk
  • 1/2 teaspoons Vanilla
  • 1/4 teaspoons Nutmeg
  • 1/8 teaspoons Salt
  • 1 teaspoon Confectioners Sugar, For Dusting

    Preheat the oven to 400 F. In a 10-inch cast iron skillet over medium heat, melt the butter and 3 tablespoons of the brown sugar. Add the apple slices and the pinch of cinnamon and cook for 5-7 minutes, stirring occasionally. Remove from heat and spread the apples into an even layer.

    In a medium bowl, whisk together the eggs, flours, milk, vanilla, remaining cinnamon, nutmeg, salt and the remaining tablespoon of brown sugar. Pour batter slowly over the cooked apple mixture.

    Transfer the skillet to the oven and bake until golden brown, set in the center and puffed around the edges, about 15-20 minutes. Remove from oven. Dust with confectioners' sugar and serve immediately.
