  • 1 1/2 c. white cornmeal
  • 1 to 2 Tbsp. sugar
  • 1 c. buttermilk
  • 1/2 tsp. baking soda
  • 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 egg, beaten
  • about 1 Tbsp. oil (for skillet)

Directions

    Combine all ingredients; stir until all dry ingredients are moistened.

    Place cast-iron skillet in a 475° oven until skillet is hot.

    When skillet is heated, spoon in mixture and bake for 20 minutes.

    Serve hot, buttered.
