  • 3 Tbsp. lard
  • 1 1/2 c. white cornmeal
  • 1/2 c. all-purpose flour
  • 1 1/2 c. buttermilk
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg

Directions

    Preheat the oven to 400°.

    Heat the lard in a 9-inch iron skillet over moderate heat until the lard has melted.

    Set aside. Combine the cornmeal, flour, baking soda and salt in a mixing bowl. In another bowl, beat the egg lightly with a fork, then stir in buttermilk and the melted lard.

    Pour the buttermilk mixture over the cornmeal mixture and stir together just until the batter is smooth.

    Pour the batter into the prepared skillet.

    Bake in the center of the oven for about 20 minutes or until the top of the bread is golden brown and the sides have begun to draw away.

    Cut into wedges.
