  • 1 c. cornmeal
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. buttermilk
  • 1 egg, beaten
  • 1/2 c. Parkay margarine, melted
  • 2 c. (8 oz.) cheese, shredded

Directions

    Preheat greased 9 or 10-inch heavy ovenproof skillet in a 350° oven. Combine dry ingredients.

    Add combined buttermilk, egg and margarine, mixing just until moistened.

    Stir in 1 1/2 cups cheese.

    Pour into skillet. Bake at 350° for 30 to 35 minutes or until wooden pick inserted in center comes out clean.

    Sprinkle with remaining cheese.

    Continue baking until cheese is melted.
