- 1 c. cornmeal
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 c. buttermilk
- 1 egg, beaten
- 1/2 c. Parkay margarine, melted
- 2 c. (8 oz.) cheese, shredded
Directions

1Preheat greased 9 or 10-inch heavy ovenproof skillet in a 350° oven. Combine dry ingredients.

2Add combined buttermilk, egg and margarine, mixing just until moistened.

3Stir in 1 1/2 cups cheese.

4Pour into skillet. Bake at 350° for 30 to 35 minutes or until wooden pick inserted in center comes out clean.

5Sprinkle with remaining cheese.

6Continue baking until cheese is melted.
