- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 cup buttermilk
- 1/4 cup bacon drippings or melted butter
- 2 large eggs
Directions

1Grease a 9-inch cast-iron skillet; preheat in a 400° oven 4 minutes.

2Combine first 5 ingredients in a bowl; make a well in center of mixture.

3Combine buttermilk, bacon drippings, and eggs, stirring well; add to dry ingredients, stirring just until moistened. Pour into hot skillet.

4Bake at 400° for 20 to 25 minutes or until golden brown. Remove from skillet, and serve warm or at room temperature.
