Skillet Custard Corn Bread

  • 2 Tbsp. butter
  • 1 1/3 c. yellow cornmeal
  • 1/3 c. plain flour, sifted
  • 1 tsp. baking soda
  • 4 Tbsp. sugar
  • 1 1/4 tsp. salt
  • 2 c. milk
  • 2 eggs
  • 1 c. buttermilk

Directions

    Heat oven to 400°. Melt butter in iron skillet or baking pan in oven.

    Sift cornmeal, flour, soda, salt and sugar in mixing bowl.

    Stir in 1 cup of milk, eggs and buttermilk.

    Pour into skillet, then pour other cup of milk over mixture.

    Do not stir. Bake at 400° for 35 minutes.
