- 1 small brown onion, chopped
- 10 corn tortillas, cut into small squares
- 1 can corn
- 1 can pitted olives
- 1 can enchilada sauce
- 1/2 to 1 c. Co-Jack cheese
- 2 Tbsp. cooking oil
Directions

1Put oil in skillet; add chopped onion and tortillas.

2Stir-fry over medium heat until tortillas are soft.

3Add enchilada sauce and reduce heat.

4Add corn and olives and heat through.

5Add cheese and cook until melted.

6Serve with refried beans.
