Skillet Enchiladas

  • 1 tablespoon Vegetable oil
  • 2 Bell peppers (any color)
  • 3 pieces Cooked, shredded chicken
  • 2 tablespoons Chicken taco seasoning
  • 3 tablespoons Chicken broth
  • 8 Tortillas - taco-sized
  • 1 1/2 jar Enchilada sauce - preferably Trader Joe's
  • 1 cup Sour cream
  • 2 cups Shredded cheese

Directions

    Add oil to a skillet and heat it up. Cut up the bell peppers and cook them through. Set aside.

    Add chicken to the same skillet, season with the taco seasoning, and add some broth. Heat through. Set aside.

    Mix the enchilada sauce and sour cream together well. In the same skillet, put just enough sauce to cover the bottom.

    Warm the tortillas. Place tortillas to just cover the whole bottom. May need to cut some and overlap a bit. Ensure the whole bottom is covered.

    Top with chicken, peppers, and 1/2 of the shredded cheese. Add a little of the sauce.

    Top with remaining tortillas, creating a fully-covered top.

    Top with the rest of the sauce and the cheese. Cover, and cook until the cheese is melted and all is warmed through - approximately 5 minutes. Cut into wedges to serve.
