Skyhigh Lemon Icebox Pie

Ingredients

  • 4 egg yolks
  • 2/3 c. sugar
  • 4 Tbsp. lemon juice (more for tart flavor)
  • grated rind of 2 lemons
  • pinch of salt
  • 3/4 Tbsp. Knox gelatine
  • 1/3 c. cold water
  • 4 egg whites
  • 2/3 c. sugar
  • 1/2 pt. cream, whipped

Directions

    Beat egg yolks.

    Add 2/3 cup sugar, salt and lemon juice; cook in double boiler until thick.

    Add lemon rind and the Knox gelatine that has been soaked in 1/3 cup cold water for 5 minutes. Let cool.

    Beat 4 egg whites stiff.

    Add 2/3 cup sugar; beat until creamy.

    Fold in first mixture.

    Place in baked pie shell, skyhigh.

    Chill for at least 6 hours or overnight.

    Top with the whipped cream.

    Garnish with slivers of sliced lemon.
