  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1 cup Onion, Thinly Sliced
  • 1 Tablespoon Red Chili Flakes
  • 2 Tablespoons Fresh Basil, Finely Chopped
  • 2 cloves Garlic, Minced
  • 1- 1/2 teaspoon Salt
  • 2 cans Diced Tomatoes, Drained (or Dice Up 2-3 Fresh Tomatoes)
  • 2 cups White Mushrooms, Sliced
  • 1 package Frozen Spinach, Thawed
  • 1- 1/2 cup Cooked Chicken, Cubed
  • 1 pound Thin Spaghetti
  • 1 cup Or More Freshly Grated Parmesan Cheese

Directions

    Heat EVOO in large skillet over medium high heat.

    Add onion, garlic, chili flakes, basil and salt; saute until onion is soft.

    Add tomatoes, mushrooms and spinach.

    Cook until mushrooms are soft but not mushy.

    Add chicken and heat through.

    While mixture is heating, cook pasta to al dente.

    Serve chicken mixture over pasta with Parmesan cheese.
