  • 1/2 to 1 lb. ground beef
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 Tbsp. chili powder
  • 2 c. uncooked rice
  • 2 c. hot chicken or beef broth
  • 2 c. peeled, diced tomato pieces

Directions

    In skillet, brown beef with onion, green pepper and chili powder.

    Add rice.

    Stir until glazed.

    Add broth; bring to a boil.

    Cover and cook until broth is absorbed, about 10 minutes. Add tomatoes; cook 5 minutes longer or until liquid is absorbed and rice cooked through.
