Slow- Cooked Spiced Lamb

Ingredients

  • 1 tablespoon oil
  • 2 small red onions, sliced
  • 1/4 cup seasoned flour
  • 1 teaspoon cumin
  • 8 lamb chump chops, trimmed Safeway 1 lb For $5.99 thru 02/09
  • 800g can diced tomatoes
  • 1 tablespoon VEGEMITE
  • 600g baby chat potatoes
  • 1/2 cup chopped flat- leaf parsley
  • cooked zucchini and button squash, to serve

Directions

    Heat half the oil in a large frying pan over medium heat and saute onions until tender, then transfer to slow cooker.

    Combine flour and cumin and coat lamb chops.
  3. 3
    Heat remaining oil in the frying pan and cook over high heat for 2 minutes each side, until browned, then transfer to slow cooker

    Add the tomatoes, Vegemite and potatoes to the slow cooker, cover and cook on HIGH for 3-4 hours or on LOW for 6-8 hours.

    Skim fat from sauce then serve alongside zucchini and squash, sprinkled with parsley.
