- 6 lb. beef short ribs
- salt and pepper
- barbecue sauce (if desired)
Directions

1Heat oven to 500°.

2Pour about 1 cup water into a roasting pan. Put the ribs, fat side up, on a rack in the roasting pan and sprinkle with salt and pepper.

3Roast 20 minutes.

4Reduce heat to 300° and continue roasting until the ribs are tender, about 2 1/2 hours longer.
