Ingredients

  • 1/4 c. minced onion
  • 1 garlic clove, chopped
  • 1/4 c. extra virgin olive oil
  • 3 1/4 c. (2-14 ounce. cans) sliced stewed tomatoes with liquid, cut into sm. pcs
  • 1 tbsp. dry basil
  • 1 teaspoon salt
  • 8 ounce. (3 c.) sm. rigatoni, uncooked

Directions

    Saute/fry onion and garlic in oil in medium skillet till onion is tender, but not brown.

    Add in tomatoes with liquid, basil and salt; bring to boil over medium heat.

    Reduce heat; simmer 20 min, stirring occasionally.

    Cook small rigatoni according to package directions; drain.

    Toss immediately with sauce.

    Garnish with fresh parsley, if you like.
