  • 3 egg yolks
  • 2/3 cup powdered sugar
  • 1 15/16 cups mascarpone cheese
  • 2 tablespoons instant coffee
  • 3 tablespoons hot water
  • 5/8 cup heavy whipping cream
  • 2 egg whites
  • salt
  • cocoa powder
  • cookies as a garnish

    Beat the egg yolks with the powdered sugar until creamy and white.

    Mix the mascarpone cheese in well.

    Separately, mix the instant coffee with water and, once combined, add to the bowl.

    Separately, beat the heavy cream until whipped into soft peaks. Carefully fold into the mixture.

    Beat the egg whites with a little salt into soft peaks. Fold this into the mixture.

    Pour into a mold or individual glasses and refrigerate at least an hour.
