Smashed Potatoes

  • 4 whole Leftover Baked Potatoes From Fridge
  • 4 Tablespoons Olive Oil
  • 1 Tablespoon Sea Salt

Directions

    Preheat oven to 500 degrees F. Take a baking sheet and line it with foil.

    Remove your leftover baked potatoes from fridge. Place potatoes on baking sheet, spread out evenly. Take the bottom of a small plate or glass and press it on top of each potato until it is flat or smashed. Then drizzle the potato with olive oil. Grind the sea salt on top of all the potatoes. Place potatoes in oven for about 15 to 20 minutes just until they start to crisp.

    Very good and a fast side dish. My husband tops it with butter, sour cream, and cheese. Me, I just eat it the way it comes out of the oven!!
