Smashed Yukon Potatoes

  • 3 lb Yukon gold potatoes
  • 8 clove garlic; smashed and peeled
  • 3/4 oz rosemary; minced
  • 1 stick butter; cubed
  • 1 packages bacon; cooked and diced
  • 1/2 cup grated parmesan
  • 1 cup aged sharp cheddar; shredded
  • 1/2 cup heavy cream
  • 2 tbsp sour cream
  • 1 salt and pepper

    Cover potatoes and garlic with cold, salted water.

    Boil until potatoes are fork tender.

    Drain.

    Return to pot.

    Turn on high heat for one minute to remove excess moisture.

    Add remaining ingredients.

    Smash potatoes and fold ingredients together.
