Smashing Squash

Ingredients

  • 2 lb. zucchini, sliced
  • 1 carrot, grated
  • 1 large onion, sliced
  • 1 stick butter
  • 1 bag regular Pepperidge Farm stuffing mix
  • 1 c. sour cream (can use lite sour cream)
  • 1 can undiluted cream of mushroom soup
  • garlic to taste, chopped and sauteed in melted butter until cooked

Directions

    Cook squash until just tender; drain.

    Melt butter in large pan; saute garlic.

    Add 1/2 bag of stuffing mix.

    Add sour cream, grated carrot, onion, soup and squash.

    (Onion can be cooked slightly with garlic, if desired.)

    Mix well.

    Pour into casserole and top with remaining stuffing.

    Bake until desired warmth, about 1/2 hour at 350°.

    Freezes well.

    Can be made easily in the day and refrigerated until time to heat.
