- 3 medium potatoes peeled, halved
- 2 eggs lightly beaten
- 2 tablespoons rice flour
- 7 ounces smoked cod chopped
- 1 tablespoon fresh chives sliced
- 1 tablespoon lemon juice
- oil for shallow frying
- cream cheese to serve
- baby arugula to serve
Directions

1Place potatoes in a small microwave-safe bowl. Cover with water and microwave on high (100%) for 4 mins. Drain, let cool then grate.

2Combine eggs and rice flour. Add cod, grated potato, chives and lemon juice. Season then form into 1/4 cup patties. Working in batches, heat oil in a large frying pan over high heat and cook patties, flattening slightly, for 3-4 mins per side, until cooked through and crispy. Drain on paper towels. Serve with cream cheese and arugula.
