Smoked Fish Pie

Ingredients
- 1 lb potatoes, peeled, chopped
- 3 1/2 tbsp butter, cubed
- 1 cup heavy cream or half-and-half, 1/2 cup warmed
- 5 None large eggs
- 1 pinch grated nutmeg
- 1 None lemon, zested
- 9 oz smoked fish, bones removed, flaked
- 2 None spring onions, thinly sliced
- 2 tbsp chopped fresh dill
- None None lemon wedges and green salad, to serve
Directions

1Place potatoes in a saucepan of salted water. Bring to a boil then reduce heat and simmer for 15 mins, or until tender.

2Preheat oven to 400°F. Drain potatoes then pass through a ricer or mash well. Add butter and warmed cream and beat until combined. Season to taste.

3Beat eggs and remaining cream together. Add nutmeg and lemon zest. Fold in fish, spring onions and dill. Season to taste. Spoon into 4 small pie dishes or ramekins.

4Fill a piping bag with hot mashed potatoes. Pipe potatoes on top of pies. Bake for 20 mins, or until golden brown. Serve with lemon wedges and green salad.
