Smoked Ham Paella

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 red pepper, cored, seeded and sliced
- 1 garlic clove, crushed
- 200 g long grain rice
- 180 g smoked ham, roughly diced
- 900 ml chicken stock
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 100 g large shrimp
- 100 g frozen peas
- salt & freshly ground black pepper
Directions

1Heat the oil in a large frying pan and cook the onion for 3-4 minutes until softened and golden. Add the red pepper, garlic and rice and stir fry for 1 minute. Add the ham, stock, paprika and tumeric, bring to the boil and simmer for 12 minutes.

2Stir in the prawns and peas and cook for a further 3-4 minutes, until the rice and vegetables are tender. Season to taste, then serve immediately.
