- 3 medium baking potatoes, scrubbed
- 1 Tbs. butter
- salt and pepper, to taste
Directions

1Cut potatoes in 1/2- to 3/4-inch slices, leaving skin on.

2Arrange them on smoker rack and season to taste with salt and pepper.

3Depending on moisture content of potatoes, cook on medium heat, using a tablespoon of hickory wood chips.

4Smoke for 35-45 minutes.

5Remove from smoker and toss with butter, salt and pepper to taste.
