  • 3 medium baking potatoes, scrubbed
  • 1 Tbs. butter
  • salt and pepper, to taste

Directions

    Cut potatoes in 1/2- to 3/4-inch slices, leaving skin on.

    Arrange them on smoker rack and season to taste with salt and pepper.

    Depending on moisture content of potatoes, cook on medium heat, using a tablespoon of hickory wood chips.

    Smoke for 35-45 minutes.

    Remove from smoker and toss with butter, salt and pepper to taste.
