  • 2 1/4 pounds beef stew meat
  • 3 1/8 ounces speck cut into cubes
  • 2 1/8 cups beer rauchbier smoked, may substitute a double malt beer
  • 1 white onion
  • 2 carrots
  • 2 bay leaves
  • 2 tablespoons flour
  • 1 1/4 cups vegetable broth
  • extra-virgin olive oil
  • salt

Directions

    Peel and slice the onion and the carrots.

    Place 2 tablespoons of oil in a large saucepan and saute the onion, carrots, speck, and the bay leaf.

    Add the meat, coated in the flour, and brown it for 2 minutes.

    Pour the beer into the saucepan and allow it to evaporate.

    Add the vegetable broth and cook the stew on medium-low for 2 hours.
