- 2 1/4 pounds beef stew meat
- 3 1/8 ounces speck cut into cubes
- 2 1/8 cups beer rauchbier smoked, may substitute a double malt beer
- 1 white onion
- 2 carrots
- 2 bay leaves
- 2 tablespoons flour
- 1 1/4 cups vegetable broth
- extra-virgin olive oil
- salt
Directions

1Peel and slice the onion and the carrots.

2Place 2 tablespoons of oil in a large saucepan and saute the onion, carrots, speck, and the bay leaf.

3Add the meat, coated in the flour, and brown it for 2 minutes.

4Pour the beer into the saucepan and allow it to evaporate.

5Add the vegetable broth and cook the stew on medium-low for 2 hours.

6Serve hot.
