  • 12 lb. turkey
  • 1 medium onion
  • 1 stick butter or margarine
  • 1 small bell pepper (if desired)
  • 1 small stalk celery (may be substituted for or combined with pepper, according to taste)

    Take off foil last hour to brown.

    If larger turkey is desired, smoke 30 minutes per pound.
