- 3 tablespoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 6 medium beets, peeled and chopped
- 2 cups stock
- pepper
Directions

1Warm olive oil in a large sauce pan over medium heat.

2Stir in onions and garlic, cook until soft.

3Stir in beets.

4Add stock and pepper.

5Bring to a boil and simmer until.

6beets are tender.

7Remove from heat.

8Cool slightly and puree with a hand blender.

9Return to sauce pan and heat gently until hot and then serve.
